This is my first holiday season without dairy. Meaning, no eggnog.

NO EGGNOG.

I don't know about you, but the holidays just don't sparkle as much without a tall glass of ice cold, full fat eggnog. The real thick and nasty stuff. The stuff that calls for immediate glass soaking in order to ever get that badboy clean.

Over the years, I have taste tested many brands and styles of eggnog. What seems to be a universal truth is that anything off the shelf that is not full-fat, full-dairy, and full-of-eggs is kinda sorta not very good...at all. So I wasn't all that surprised when I full on hated soy "noel nog".

I knew the only way I would be able to enjoy eggnog this year would be by making it myself. I looked in all the usual places for dairy free eggnog recipes. This post from TheHairPin was very helpful and is pretty hilarious. And PostPunkKitchen's amazing sounding recipe seems simple in theory, but has a bit of a "made to order" clause. Also, admittedly, I am more than slightly weirded out by the idea of using solids to thicken my nog. Dates, tofu and pudding mix are not ingredients I'm jumping at the chance to guzzle down on Christmas. No sir. And anyone who claims you can't taste banana when using it to thicken beverages is a banana loving liar. That's right, internet. I said it.

After making lazy homemade horchata in the fall, I figured there must be a way to make lazy eggnog. After some trial and error, I came up with a recipe lazy enough to keep me and my tastebuds happy.

The solution? A marriage between the thickness of cashew milk and the creaminess of dairy-free coffee creamer. I am by no means aiming for a healthy alternative to eggnog. More like an authentic substitute. With a hint of maple syrup for sweetness and just over a teaspoon of spices, this eggless-nog is almost weirdly similar to the real thing. And probably almost as unhealthy... but, I added a bit of turmeric for good measure. That's healthy, right?

The process was simple, just the way I like it. Add cashew milk and soy creamer to a mason jar. Add maple syrup and spices. Put the lid on and shake, then let it sit so the flavours can mingle--if you're patient. Either way, it's a fast-track to holiday noggy bliss.

Lazy Vegan Eggnog
(makes 1L/qt)
Print this Recipe

Ingredients:
  • 2.5 cups cashew milk
  • 1 cup "regular" soy or coconut coffee creamer
  • 3 tbsp maple syrup
  • 1 tsp ground nutmeg
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves

Directions:
  1. In a large mason jar, mix together all ingredients and shake until well combined.
  2. Chill/Let sit for at least an hour to let the spices absorb. Serve cold.
