Sassy Summer Salad

In keeping with my "what-I-made-for-vegan-guests" tradition, here's a simple and delicious recipe for what I'm calling a "Sassy Summer Salad". Hopefully the cheesy name police don't nab me for that one.

This salad recipe feels gourmet without the stress. It's an easy and elegant way to add a touch of class to any small (or not so small) gathering. The fact that it's vegan will go unnoticed as people realize how tasty it is!



Sassy Summer Salad

1 large bowl of your choice of romaine, spring mix, or spinach greens
1 cup sliced fresh strawberries, chilled
1/2 cup natural almonds, sliced
1 green onion, sliced on an angle
 
For dressing:
zest and juice of one lime
1tbsp creamed natural honey
1tbsp extra virgin olive oil
1tsp fresh dill


Melt the honey in a small bowl using the microwave or other tactics. Whisk in the olive oil, lime, and dill. 
Sprinkle strawberries, almonds, and green onions over greens. Drizzle the honey lime dressing over everything just prior to serving. Garnish with a sprig of fresh dill or a few whole almonds for a more dramatic effect.



This salad was a beautiful and tasty addition to our Canada Day bbq. 
(Forgive the picture, it was hungrily attacked before I had a chance to get a good shot!)
